The noun יֹתֶרֶת (yothereth) denotes the appendage or lobe of the liver — almost certainly the caudate lobe, a fatty projection easily separated during butchering. It appears exclusively in sacrificial instructions, always in the phrase 'the yothereth on the liver' (הַיֹּתֶרֶת עַל הַכָּבֵד). This lobe was burned on the altar as part of the fat portions offered to YHWH in burnt offerings, peace offerings, and sin offerings (Exod 29:13, 22; Lev 3:4, 10, 15; 4:9; 7:4; 8:16, 25; 9:10, 19). Its consistent inclusion alongside the kidneys and the fat tail reflects the Priestly concern for specifying exactly which visceral fats belonged to God.
